Restauranteur Barry Barbe (center) has added another eatery to his eclectic collection. With business partner Luke Peterson wielding the scissors, Monk’s, at 123 South Cortez, opened its doors to a hungry public. This restaurant offers good old-fashioned down-home cooking, including “the best mac and cheese in town,” according to Barry, who also owns El Gato Azul and 129-1/2 An American Jazz Grille. He adds, “We serve Coffee Roasters coffee and espresso; we have a broad selection of domestic, imported and craft brewed beer and wine from California to Chile.
